The Egg and Avocado Sandwich

You will need the following:

A quick 15 minute recipe for a delicious breakfast sandwich guaranteed to get you fueled and running for your day! Next time I'll make sure the camera is actually getting the food haha.


·        1 Small skillet

·        1 medium skillet

·        1 small mixing bowl

·        2 eggs

·        2 slices of uncured turkey bacon

·        2 slices of Ezekiel bread

·        ½ handful of Kale Sprouts

·        Handful of spinach

·        ½ avocado

·        1 tablespoon extra-virgin olive oil

·        1 tablespoon grape seed oil

·        Himalayan pink salt

·        Cayenne pepper

·        ½ tomato

Directions:

1.      Bring skillets to temp on low-med heat

2.      Place turkey bacon on medium skillet

3.      Add grape seed oil to small skillet

4.      Add eggs to small skillet

5.      Remove the avocado and place in mixing bowl with extra-virgin olive oil – salt and pepper to preference.

6.      ‘Whip’ or mash the avocado together with a fork

7.      Toast Ezekiel bread

8.      Slice tomato in bite size chunks

9.      Spread avocado on bread

10.   Top avocado with sprouts, spinach, and turkey bacon.

11.   Finally add the over-medium eggs and enjoy :)
